FREQUENTLY ASKED QUESTIONS GENERAL Q. What is the reddish-pink color around the outside edge of the meat? A. This is call the “smoke ring” and is considered a prized attribute …one that judges look for in competition BBQ. Some or all of the meat may have a pinkish-red color when done depending on the smoking process and type of meat/poultry. Q. Some of the meat appears pink and undercooked. A. This is part of the smoking process. It can turn the meat a pinkish-red color or even a reddish-pink color depending on the type of meat. BBQ meat, poultry, and fish are cooked to appropriate doneness per health department guidelines; some meat is cooked for as long as 12 or more hours. We use digital thermometers to check for the appropriate doneness for the type of meat or poultry being cooked. We strive to be sure it is appropriately and safely cooked…but we also strive to not over cook the meat/poultry. Meat/poultry may be smoked, then grilled off, and then placed in an oven to finish off or keep warm and that has a lot of “cook time” involved in the process, too. We realize it may be more of a visual concern than a health concern for some. However, if you ever feel the meat needs to be cooked more for your satisfaction or peace of mind, please feel free to cook it some more on a low temperature in the oven or microwave. Q. How much meat should I order per person? A. According to the “experts”…the average portion is supposed to be around 3-5 ounces for women/men, but we find that most people prefer around 6-8 ounces…depending on the number of side dishes being served. Obviously, this will vary depending on meat, chicken, or fish. We would be happy to discuss this concern and see if we can make a recommendation to be sure your guests don’t go away hungry. BBQ is best eaten fresh, but leftovers can always be used for another meal or in a favorite recipe. Q. Does the gratuity we add to the final bill go to the staff? A. Of course. It is very much appreciated by them, too. You may only see one or two people make a delivery or set up a function, but there could be several behind the scenes people helping to prepare the food, etc. Gratuities are divided up among all of those doing the work. You may also choose to offer an individual gratuity to a particular staff member that you felt went above and beyond your expectations. Q. What credit cards to you take? A. We accept Visa, MasterCard or American Express. And, by the way, we also take Debit cards. PORK SPARE RIBS
Q. How many people will one rack of pork spare ribs feed? A. Each rack has about 10-12 ribs. Perhaps 2-4 people (depending on the people) and the amount of side items that will be served with it. Q. How do I reheat the pork spare ribs? A. The ribs are fully cooked and seasoned. We suggest reheating them on a grill or in the oven (low heat and slow). Preheat the oven to around 225-250 degrees, put your ribs on some aluminum foil but not fully enclosed in foil. Heat them for around 20 minutes. Remember, you are simply heating the ribs…not cooking them. Once reheated, we suggest basting them lightly with Rogue BBQ Sauce. If you choose to use the grill to reheat them, heat them indirectly using the same process and degrees of heat. Q. Can I freeze the ribs if we do not eat them all? A. Yes, but we suggest you eat them within the next 2-3 months for optimal taste and quality. However, we feel they are best eaten fresh and recommend not to freezing them as it tends to dry out the meat. Q. How long will the ribs stay good left in the refrigerator? A. If well packaged, perhaps up to a week. (But, they wouldn’t make it that long in our house without being eaten!) Q. How long does it take for the ribs to thaw out? A. Completely frozen ribs may take a day or two to defrost in the refrigerator. We suggest completely thawing the meat and bringing it close to room temperature before reheating. This applies to all meat, poultry or fish depending on room temperature conditions. PULLED PORK
Q. How many sandwiches can I make with a one pound container of pulled pork? A. We usually serve 4-6 ounce portions of the pulled pork on our sandwiches. However, you can adjust that amount to suit your family/friends preferred portion size. And, like mentioned above, it may depend on what other items are being served as well. Q. How do I reheat the pulled pork? A. You can reheat the pulled pork in the oven or in the microwave. If you use your oven, empty the pulled pork into an oven safe container and cover it with aluminum foil. Depending on the amount of pulled pork to be reheated, we suggest heating the pulled pork for approximately 30 minutes at 225-250 degrees. If a microwave is used, cover and heat it on the lowest setting until warm enough to eat – checking it every few minutes. We prefer using the oven method, if time allows. Always stir thoroughly before serving. Some people like to mix some Rogue BBQ Sauce in with the pulled pork before reheating or serving it. Pulled pork should only be frozen for just a short amount of time for optimal quality and flavor. Another note: when you start smelling the food that is being heated, it is usually an indication that it is close to being ready to eat. SIDES & DESSERTS
Q. How do I reheat the BBQ beans? A. You can reheat the BBQ beans in the oven or in the microwave. If you use your oven, empty the BBQ beans into an oven safe container and cover it with aluminum foil. You may want to add a slight amount of water to the beans, to keep them moist. Again, depending on the amount of beans to be reheated, we suggest heating the beans for 30-45 minutes at 225-250 degrees. If you use your microwave, cover and heat it on the lowest setting until warm enough to eat – checking it every few minutes. Again, we prefer using the oven method. Stir thoroughly once again before serving. Q. What are Cowboy Beans? A. Pinto beans with smoked pork rib meat, onions, spices, etc. Q. What are Cowboy Cookies? A. These are a blend of all of our favorite types of cookies. Chocolate Chip, Oatmeal, Macaroon (Coconut), with nuts added. We typically use pecan nuts in our Cowboy Cookies. They are crispy but still chewy. They are a large cookie – about 4” in diameter…the serving size of one per person for the $1.00 price per cookie. Q. How long will the coleslaw last? A. Several days in the refrigerator, however, it will not remain crisp like freshly made. We recommend that you eat it fresh whenever possible. DROP-OFF CATERING
Q. What is the minimum order amount required to have for the drop-off type of catering service? A. A minimum dollar amount of $75. If your delivery order is running shy of the required amount, just give us a call and we can discuss it or make some suggestions that might help with how to achieve the minimum dollar amount. Q. How much notice is required for the drop-off type of catering service? A. A minimum of 48 hours due to the smoke time that may be needed. Other factors may impact the time required as well, e.g. volume of delivery orders requested on any given day, etc. Therefore, we suggest as much notice as possible. FULL SERVICE CATERING
Q. What is the minimum order amount required to have full service catering? A. A minimum dollar amount of $150. The charge per person ranges from $16 to $20 per person unless you are ordering specialty meat items. See the Full Service Menu for more details. Q. How much notice is required for full service catering? A. Generally, a minimum of 7 days is required, but will always strive to meet your need whenever possible. However, to be sure we are able to cater on the event date you need, please give us as much notice as possible. Some people book dates a year in advance of the event to be sure of having the date secured. We always try to be as flexible as possible, but unfortunately, we can only cover so many events in one day. Q. Are you able to provide other menu options that are not on your current menu? A. Yes, and we would be happy to see what you have in mind and/or discuss other menu options with you. We are very creative and can keep the menu simple or make it gourmet. Price adjustments may be needed, but we always try to work within your budget, if at all possible. Q. Your menu says you do buffet-style catering. We need it to be more formal and wish our guests to be served. Can you provide that type of service, too? A. Yes, we can provide served seating as well. We will discuss all of your needs when we discuss your event and/or complete the Catering Proposal Questionnaire. This questionnaire covers the most asked questions or requests needed for catering services.
